Dr. Seuss is a family favorite around here, with one of our top favorites being the classic storybook, The Cat in the Hat.
One of the things I love to do with my younger kids is to incorporate an activity or snack into our story time, or both! When we read a story, I like to find something fun and memorable to go along with it.
We love the Thing 1 and Thing 2 characters from the Cat in the Hat (maybe it’s because we have twins in our family?) and in the past we have made Thing 1 and Thing 2 puppets and also Thing 1 and Thing 2 characters out of empty toilet paper rolls.
Now we needed a snack to go along with this much-loved story and we also need something that centered on the cat! So Cat in the Hat cupcakes it was! But we did a little twist on regular cupcakes and decided to make them with ice cream cones (we used to make cupcakes in cones when I was a kid).
So here’s how to make them:
INGREDIENTS:
- 1 Box White Cake Mix – 1 Box of cake mix makes 20-22 ice cream cone cupcakes.
- 1 Can White Frosting – or make your own
- Red Ice Cream Cones
- Life Saver Gummies (Only need the Red)
- Red Food Coloring
DIRECTIONS:
Start out by preheating your oven to 350 degrees.
Make the cake mix according to package the directions and then fill the ice cream cones about 3/4 of the way up.
Place each cake batter filled cone onto a cookie sheet and very carefully place the cookie sheet in the oven. Bake the cupcakes for 23-25 minutes and remove them from oven. Set them aside and let them cool.
Split up the frosting between two bowls and color one red. Place each color of frosting into a separate baggie or piping bag and snip the corner.
Once the cupcakes are cooled, pipe on a thin layer of white frosting; then pipe on a smaller circle of red frosting and end with a smaller circle of white frosting.
Place one gummy on top of the frosted cupcake and pipe frosting around the gummy; then place another gummy on top. Repeat this step until you have 3 gummies stacked on top of each other.
Now they are ready to enjoy and serve for a fun Dr. Seuss party!
